Just some peach mead I put together last night

2lb of organic peaches + 4.5lb orange blossom honey Initial gravity measurement is saying I should be able to hit 18-20% (depending on when the yeast gives up), and should have a little sugar left to keep it sweet! Contemplating trying to split it and add a floral note in the second stage, maybe lavender?
