What you have to realize is that the island isn't "finished". It's just usuable now. He already plans on adding sections as time goes by so count on it getting bigger and more impressive. As for the Mangroves being smaller, he's allowing the trees to grow that way their roots will intertwine with the nets and bottles so as to create a firmer base which they island can float upon.
