To me, lol means, "I've read what you wrote me, I just don't have a response, but feel free to continue talking." If I didn't say 'lol' the person talking would perceive it as some sort of awkward silence...

Also, I'd simply argue that lol doesn't mean "laugh out loud" anymore at all. The biggest barrier with text-based communication is a lack of nonverbal cues. "lol" is just a text substitute for body language that would convey a light-hearted attitude towards the conversation. It can be helpful if you choose to use it.
