        80% meat is actually considered to be high quality for sausages. Those cheap nasty sausages you see on sale usually contain around 25% meat.
        • serend, on 05/03/2008, -0/+14when I worked for Burch Wood Foods... they had this 'stuff' that came in IPI labeled boxes and smelled like cat urine (ammonia) it was pale white almost gray. contained %0.001 fat. The story behind this stuff that I could get from the company (IPI) is its all of the tendons all of the tissue organs everything from the cow that's not red meat cooked for a looooong time and they separate the fat leaving this crud behind. simply put this ***** is filler its in A&W, Dairy Queen (all but grill burgers which are 100% Angus) and most formed patties you buy boxed. My point is.. even though it says 100% beef doesn't mean its 100% red meat. It would be very nice to see those kind of labels on stuff in America.

Actually, I used to take great pleasure in carving the eyes out with a knife. 80% pork isn't actually that bad - take a look at a pack of sausages once in a while, even a top of the range branded pack, and you'll find figures less than 70%.
