Your body doesn't really have more Oxygen after hyperventilation; it only "thinks" it does (due to CO2 levels).
This means that you can easily black out whilst underwater without being noticed, and then you're screwed.

When you take in ice-cream or a cold drink it chills the blood in those vessels. The chilled blood then goes to your brain and - AAAARRRGGHHH! Brain freeze!
Pressing your tongue to the roof of your mouth warms the chilled blood and brings your brain back to a normal temperature.
