I hear you, man - but after 4 years of design school and another 3 years in the industry, I can honestly say you're only half right. As much as any designer worth his pixels hates to admit it, a big portion of our job really is "making things look pretty" - or to put it more professionally, to "elicit an emotional response". You're thinking with your male brain too much... High-brow "symbolic meanings" might make for compelling project rationales and case studies... but IRL, those things are only fascinating to other designers, especially when it's about their own work.
The general public (for whom the design is almost always for) really doesn't register these things at that level. If it don't look cool, they don't care. But that said, "cool" is as much an emotional science as "symbolic" is an intellectual one.

Somewhere along the road design got confused with its tools. This is exactly the reason web 2.0 logos suck. Designing a logo is not only about creating something good-looking, or being clever with letters, shapes and colors. Good logos have a symbolic meaning that goes beyond aesthetics. I'm certain there are going to be several websites pop up with VERY similar logos to those because creativity seems to be rather difficult to locate from time to time.
