Were I to do it, I'd use my basic text layer as a mask, just painting white over the blades of grass I wanted to stick out, then just pop that black & white layer into my selection and punch it out. Much faster than using the pin and bezier paths and still easy to adjust later.
Additionally, you'd save yourself a lot of time by applying layer effects, shadows, and so on to all the letters at once instead of applying the same set of a dozen or more adjustments to each letter individually. - Narrwald, on 05/23/2008, -0/+1"Obviously".

Pen tool is more usefull to have a sharp straight or curved line. and anyway, the hardness of your brush can be chosen at all times. i don't think that an inverted selection then erase is a good solution. But i really like the wind effect in the shadow, really looks like it's made by grass
