- inactive, on 10/12/2007, -3/+6There is nothing special about the surface per se as it is most likely controled by an overhead camera which is watching for changes in motion and objects and updating the projector underneath through some computation and nifty effects.

its similar to a plasma ball, those van-der-graff generators with a noble gas in them. They are also available flat, as seen here. Which would imply 2 things, the sensor is above the bar counter, and it is not projected onto it. (However, it would be possibly for the counter to detect changes in light, but that is probably too much work. And theoretically it could be projected from the side, but that is very unlikely.)

Also in any of the pictures i didn't see anything overhead but that could've been easily edited out. So I'm still not sure what the surface is but it appears not to be projected from over head.
