-Evernote (single most useful iPhone app IMO)
-Various remote access tools: VNC, SSH, RDP, telnet
-Various front ends for things like flickr, facebook, myspace, etc
-Lots of mobile information tools, too many to list.
-Tons of music apps like last.fm & pandora -- other various streaming media apps.
-Tools to transfer & access files for viewing.
-GPS tools such as Trail Guru
-Lots of conversion/reference material apps. The very definition of useful in my mind is being able to make a complex conversion in about 10 seconds vs. getting a paper and pencil and hoping I remember the formula.
I don't know what you define as useful but for a mobile platform I'd say this tools are incredibly useful but no one is going to swoon over an app like Units because it's pretty boring. It converts stuff. What more is there to say? You're also assuming people want useful apps and the truth is most don't.
