First thing I thought in reading this was "they're trying to make the iPhone seem more popular than it actually is at this point. I can't imagine that they're having trouble meeting the demands of the consumers having made it through the launch with no shortages. What that means is they can't refuse to accept cash for a *debt*. However, since you aren't in debt to apple, you just wish to purchase something they have, they can refuse to sell it to you.

Apple has long passed as the quiet struggling innocent underdog of the computer world. They are like any other large Wall Street company making decisions that look good in their minds that will help their margins and beat the street and reward the share holders because that’s the people thay have to answer too.
What the customer wants is long since past it now what the consumer will tolerate and how much they can get people to buy buy buy . Release dates getting missed, certain features being dropped from releases, more and more restrictive warranty procedures, going after their fans for releasing information they don’t like. Sounds a lot like Microsoft clone in sheep’s clothing.

"Legal Tender" only applies to debts.... if you owe money to someone, they cannot refuse cash. You cannot take me to court and demand that I owe you a million dollars, but insist that I pay in gold. As a side note, you can however demand that I pay the exact amount, or rather you can refuse to make change (though I doubt a judge would appreciate anyone wasting the court's time over something so simple)
Private parties can do things however they please.
Another way to look at it (very valid) is that there is no debt involved... you either own your iPhone or you don't.. there is no credit involved.
Two common examples where cash cannot be refused would be:
Restaurants - you generally eat before paying. The restaurant cannot refuse a cash payment.
Gas Pump - where you pump before paying. From what I can tell, the plan is to track debit/credit card numbers to prevent people from using the same card to buy multiple iPhones.

In New Zealand life is simple, our currency is legal tender and you have to accept NZ currency in NZ. The single (sensible) restriction is a $5 limitation on coins (to prevent paying for a car in 5 cent coins).

Just purchase some of those prepaid credit cards without names on them and you have your self some nearly untraceable "cash" on a card. Again, this is just another tactic by a company to make legal and reasonable purchases by their customers more difficult and it does nothing to stop the "thieves"... not that legally paying for a phone is stealing.
Next thing you know apple will require "activations" and all kinds of other fun things that again hurt paying good customers and do nothing to "stop" what ever activity Apple does not like.

I don't sign my credit card, so I frequently get asked for my ID, but I prefer it that way, because they might just look at the picture to make sure I am the one using my card.
