I'm a pourover n00b! Tips welcome!

Got rid of the machine several years ago. Was using an AeroPress XL for a bit, but now have a new Chemex/Fellow set up that's been working great since Xmas.

After a bit of research, I've settled on a 15:1 ratio, so 780g/52g - which works great for the morning coffee requirements for my wife and I.
