[hot-take] There’s nothing wrong with Tex mex (American “Mexican” food)
Is it authentic to have 4 cheese seasoning on ground beef and not a single bean in sight? Absolutely nots. Is it going to cause a heart attack with how much fats and carbs there are in a single meal? You bet it is
But adoption of other cuisines to fit the dietary desires and available ingredients is normal in many parts of the world. Try having an American steak in Hong Kong and you’ll be heavily disappointed
My point is not “I like it and my opinion is right”. Rather it is different countries have different climates thus different available ingredients as well as different consumer preferences. So changing ingredients and styles is necessary even if it’s not authentic
