Roque Nublo on Gran Canaria, Spain

Many consider the Canary Islands to be a somewhat trashy mass tourism haven, but there's actually a lot of very descent hiking to be done there. Just head away from the beaches and explore the interior of the islands, in particular Gran Canaria (as seen here) and Tenerife.
