Ask Digg: What's your favorite note taking app?

Maybe I'm getting old, or just tired of seeing so many hacks. I'm really starting to value privacy. I've used Bear and love it, but no android app. Obsidian is a bit too utilitarian. What apps do you love that offer local storage or encrypted E2E cloud? Thanks!
