Considering the timing of the attack, and the possible options the Israeli's were discussing, the topic is a conspiracy theorists dream.
I'm not saying they did it for this reason, but I always wondered if they were considering the use of nuclear weapons.
Plenty of fodder to go off whichever way you want, no one really knows, and I doubt they kept any records to justify why.

The Israeli government, also had no reason to attack the American ship, as the US was its only ally. Here are their reasons for why the incident happened:
"The Israeli government said three crucial errors were made: the refreshing of the status board (removing the ship's classification as American, so that the later shift did not see it identified), the erroneous identification of the ship as an Egyptian vessel, and the lack of notification from the returning aircraft informing Israeli headquarters of markings on the front of the hull (markings that would not be found on an Egyptian ship). As the general root of these problems, Israel blamed the combination of alarm and fatigue experienced by the Israeli forces at that point of the war when pilots were severely over-worked."

1) Because they feared that the US intelligence ship was monitoring what was happening in the in the Sinai town of El Arish where Israeli troops were executing Egyptian prisoners on June 8, 1967.
2) As a false flag operation to try to implicate Egypt and get the US to join the fight against Egypt. Remember the Lavon Affair.

They didn't even know what the USS Liberty was, they didn't even know if it was an American ship. They couldn't have attacked the Liberty for this reason - THEY DIDNT EVEN KNOW IT WAS AMERICAN.

Israel had complete domination over Egypt from Day 1 of the 6-Day War, there was no need to attempt to get the US involved, especially in this desperate manner. No Israeli would think of this nonsense. Only a conspiracy theorist would.

Part Two – The Attack
Despite being fully aware of its status, at 2:00 in the afternoon, three unmarked Israeli Mystere and Mirage III fighter jets pummeled the Liberty with rockets and cannon fire. These bombers initially went after the ship’s antennae and electronics dishes, in the process filling the American flag full of holes. As sailors fled for cover, Liberty crewmen hoisted a new, even larger 7x13 foot flag into the air. But this new, even larger flag didn’t stop the Israeli onslaught as they sprayed the Liberty with napalm – the highly incendiary substance burning the sailor’s flesh.

If you want answers from the Israeli government, then apply pressure through it's civilians: contact news agencies and local political movements. The Israeli public is favorable of the US and will demand answers if convinced that there is a government cover up.
Do not allow Anti-Israeli political activists to hijack this subject, because they will do anything but the above, even if they pretend to care and promise to fix the situation.
p.s. Your theory (Israel did this in order to frame Egypt) makes no sense. Egypt's air force was crippled at that day, no relevant military presence could sunk this ship except Israel, which also failed.

This must also put dershowtz among the great masters of deductive reasoning through history, as well as his many credentials as a great historian and political scientist. Maybe dershowitz is the first author to ever achieve this in an entire book rather than with a few concrete syllogisms. Nobody makes an argument by saying the first premise of their argument is that an entire book is absolute truth and you must first prove the entire book of perfect truth wrong, or they have won the argument... except you. Yet ever since the world's Jews were granted the state of Israel, we have come under constant attack, not initiated it ourselves. Israel wants peace and has gone to great lengths to achieve it (numerous peace agreements and land grants). But when open borders means constant suicide bombing, when granting Gaza means a never-ending barrage of missiles, what should Israelis think, how should they respond? If you gave a parrot a cracker and it bit you, would you give it another? It's a ridiculous analogy, but you must see what I mean.
Your mindset it biased. I understand that Palestinians view that their land was taken in an unjust manner, and I sympathize. I do believe that Israel's efforts to protect itself have often been overzealous, and that they have poorly handled the situation. But a violent response from Palestinians only worsens the situation.
Israelis have voted for pro-peace politicians many times (Yitzhak Rabin? Ariel Sharon who in his later days left the Gaza strip, and made plans to grant the West Bank as well). All many citizens want is peace and an agreement with the Palestinians -once again a vocal minority distorts your view of the truth. Not serving in the IDF is illegal without the proper excuse, young Israelis who don't refuse to join the army, simply see it as serving their term and being done with it, many are not stationed in the field in 'occupied territories'. You talk about 'Open Borders' but there have never been open borders - in fact Israel has never formally proclaimed the 'Green Line' as a border. Israel has consistently demonstrated a level of belligerence that has led to this situation. All I'm suggesting is that Israelis acknowledge and atone for the violence meted out against the indigenous peoples when Israel was formed in 1948 , and again in the 1967 war, and ever since. All civilized progressive nations eventually recognize, celebrate, and compensate the minority ethnic groups within their societies. We have seen no such humility from the Israeli population - no doubt due to a less-than-honest education system that promotes xenophobic, exclusive and jingoistic attitudes. As for the treatment of Arabs as second class citizens within Israel proper, there are many documented instances such as not allowing mixed marriages, restriction of movement and pass laws. I suggest you read Jonathan Cook's book 'Blood and Religion: The Unmasking of the Jewish and Democratic State'. I think the fact that Jewishness has privileged status in Israel is all part of the problem. Britain has an official religious establishment (The Church of England) built into its institutions but this is now only a ceremonial and religious tradition with all faiths and ethnicities receiving equal treatment under the law. And we all know how the Constitution of the USA eventually triumphed over slavery and brought civil rights to blacks in the face of social prejudice. Likewise, it's time Israel actually created its own Constitution and started to model its civil discourse on that of its greatest benefactor, the USA.
