the left hand was not amputated but severely damaged
he stole the nitrogen from the restaurant where he worked and transported it in some kind of a metal bottle.
In the bathroom then he tried to open the bottle but the pressure was too high so he used a screw driver and the thing blew up

I've seen a guy get fryer oil across the face, a guy who had his shoe melted onto his foot, and other guys get body parts chopped off during normal cooking, but getting your hands blown off is a whole different level of *****-up.

I'd bet he was trying to poor it down the sink and decided that hot water would be the way to go to prevent damage to the sink. As the article says, it explodes if you vaporize it too quickly, and hot water would do that.
