You have to boil it anyways... the only other step comparable to the peeling is the 10 seconds in ice water and the pulling back of the skin. Unless you can peel a potato in the 15 seconds it takes to do that... their method is better, faster and cleaner.

Long enough to cool the outer area of the potato and allow you to pick it pick and slide the skin off. Just don't wait to long. (Also works with boiled eggs - neat (or mean, you be the judge) trick: hard boil some eggs, then dunk in ice water. Wait about 10 seconds, then pick one up, showing your friend (Oh yeah, you'll need a friend for this) how you can pick up and hold an egg that just came out of boiling water, when it starts to get too hot, hand it off to 'see' if your friend is as manly as you are)
