Soot is a buildup of carbon from a poorly combusting fire. Furthermore, I'm not a funeral director nor have I worked in a crematorium but I would GUESS that the coffin and body is placed in a sealed oven that does not vent into a chimney. All this means is that the fire they're heating the oven with is burning badly.
