Just get a free account to voipstunt and punch in your SIP info into fring, and bam! Free calls to anyone in the states (as well as a number of other countries).
Got a mic adapter that plugs into the touch (Need to have the 2g touch btw) for $3 shipped on ebay, and I just use whatever headphones I want. You can also add skype and the like if you want.

the problem is, i could only hear my friend talking. she couldn't hear me because i don't have a microphone, and the 1st gen iPod Touch doesn't work with the new microphone+earbud kit that Apple's selling now.
i checked online, and the Touchmods microphone that works with the first gen iPod Touch doesn't work with Fring, and besides it only works with an old jailbroken firmware, 1.1.x. i have firmware 2.2. - inactive, on 12/05/2008, -0/+1Yea, not like that's entirely Apple's fault or anything...

Is it possible to just have a data plan and then use a voip service that calls to landlines/cellphones and not pay for a voice plan? Voip doesn't use that much bandwidth and the rates for outgoing calls to landlines are way more inexpensive than the cheapest data plan.
