Already been done - www.betfair.com. The prices on each event are decided by customers placing opposing bets, and betfair operate purely as a matchmaker. The prices are routinely superior to bookies, often by as much as 20% (there is normally a real-time comparison on the front page that demonstrates this).
Unfortunately there isn't a huge amount of interest on US sports there because due to US betting laws the site refuses accounts to Americans, but it demonstrates the point. There are betting sites like http://www.pregame.com where you can find guys with good winning percentages OVER TIME, but you never beat the odds all the time. Betting is only around because enough people are wrong to fund the people who are right AND the middlemen.

Not so. It's big time and will never go away. Colleges, Vegas, online, offices, etc..., it's every where and here to stay.
