They're usually called "hermaphrodite" because they have one half male and one half female (and so are symmetric, but still have properly mating surfaces).
There are also perfectly symmetrical (not half-and-half) connectors, but those are usually considered hermaphrodite too.

Or the newer digital video connectors?
Like SCSI? – A lot of good, used SCSI equip is coming down the pipeline!
How about the difference between network fiber and home audio fiber connectors?
Not to mention the fact that all of these connectors have simple names (DB9, LC-LC, Etc) that can make ordering online much easier and cheaper.
What would have been nice is pin-outs.. Sometimes you have to bite the bullet and make your own cables…
