For example, Thunderbird's a great application - but it hasn't changed the fact that Outlook is still the most prevalent choice for email clients, nor does it offer enough features (unlike IE vs. Firefox) to convince people to switch.

I'm not sure that they've changed the game very much yet, but I do believe they're game changers. In spite of having licenses to Office, my office has switched to OO. So, maybe my limited scope has had an effect on my opinion, but the fact that I know tons of people that use OO as a replacement, not addendum, to MS Office leads me to believe that the game has changed a little. Before the only productivity software nipping at the heels of MS was not open source.
How is Gimp not a game changer? It replaces an extremely sought after, expensive piece of software that is regularly pirated with free, open source, similar functionality software.
Just because the score doesn't change doesn't mean the game didn't change.
