Just Hooke's law (f = -kx) describing the tension in each edge, and then an additional factor for the wind catching the triangles (dot product of the wind vector and the area vector for the triangles) which would be added to the tension at the edges - I'll admit I'm blanking on how exactly you would do that (it's been awhile since my last physics course), but it can't be too difficult. You then get values for the acceleration of each of the individual points which combined with velocity and position should be enough to make the simulation. The topology of the sheet could get tricky if he let you twist it more, but that's why you can only fix three points at a time (if you try to twist it I think he cheats and brings it back to the original orientation). And then of course all of the little things that make it pretty are usually surprisingly difficult to implement...
