Most of them are NP-complete, meaning that they are all difficult and every one of them can be "transformed" into any other number game. In other words, all of these number games are difficult and "equivalent". So why should I play SlitherLink instead of Kakuro? Why should I play Sudoku instead of Battleship? It all seems rather silly to me.
The only game I've ever found myself interested in was Picross. It's also NP-complete, but at least you get a mildly satisfying picture out of it when you're done.

Not sure of this implementation though, as it doesn't seem to run for me.
By far and away the best slitherlink I have found is the DS game called "Puzzle Series Vol. 5: Slitherlink". Perfect controls, and hundreds of puzzles ranging from tiny to huge. The only downside is the interface is in Japanese, though it is fairly easy to learn how to navigate to the puzzles. A good review of it is at http://www.eurogamer.net/articles/puzzle-series-vo ...
