As populations grew, hunters & gatherers settled down to raise livestock and grow crops, the specialization of tasks (professions) became more defined to specific people in the society since everybody didn't have to do everything anymore. Before the concept of currency, these societies were perhaps based on trade first, and I guess women would/could sell sex for things. Hence, the oldest profession.... which is isn't true, since a civilization needs to be established before you can start trading anything. The oldest profession is probably farmer or herdsman-- maybe tool maker...
