Why do people look at this as such a bitch?
Put everything in the right folders and mix VLC, SMB sharing (if in a mixed environment), and (potentially) VNC.
Get a mini keyboard if you don't have your laptop to use as a remote via/VNC, etc.
That's it. You can certainly slickify that as you wish, but you're ready to go either way.

I have an old macbook connected to the TV and use this logitech keyboard/mouse and it works fantastically.
