Just recently for a Ubuntu VPS. I use it on my desktop, so I'm comfortable with using it on the server too. Not a speed freak to get that 0.2% more speed out of it for less comfort :)

Either way, really. The primary differences between the server and desktop versions are:1. The kernel & modules - optimized for servers, or optimized for desktop & includes all the restricted drivers like nvidia, fglrx, etc.2. Default package selection.If you wanted to run a -server kernel, you could certainly do that. If you wanted the GNOME desktop, you'd want to install the gnome metapackage that requires all the deps (I believe it's just "gnome-desktop").
