Any minor (non-major) character played by John Goodman in any of the Coen Brothers films. I know people still lump him with Roseanne Barr, but he is easily one of the most underrated actors of our time.

Be sure to see Burn After Reading. It was knee-slap funny, and every cast member brought serious laughter to the table.

O Brother Where Art Thou is the next obvious choice, but they are all great. All except for Ladykillers. Uggh, I don't know wtf happened with that one. I think we will just forget they ever made that one.

I think part of the Coen's genius is their wonderfully detailed sub-characters... most of them make the movie memorable and quoteable.
