No, they are talking about "cooling evenly". If you throw it in the fridge, the outside gets cold quick, while the middle is still really warm. On the other hand, if you leave it on the counter, it will all turn room temperature, then there is a little bit more of an even cooling applied to the food. Hope that made sense.

The key there is assuming that the rate of heat transfer within the food can keep up with the rate of heat transfer from the food to the fridge. I'm not sure it can--from experience I've put warm food in the fridge, taken it out some minutes later to eat more, and the outside was cold but the inside was still warmer than room temperature, meaning the food cooled less evenly than it would have had I left it to cool outside the fridge first.
