I'm just starting to roast my own beans so this caught my eye. Vacuum seems to be the brewers method of choice and while you can get a serviceable pot rather cheaply it seems that for it to function best, you need a burr grinder for your beans, which start at $100 for a low end model!No thanks.I might check this out if my French Press ever fails me.

Cold-brewed coffee is the lowest-acid. (I happen to use a 'Toddy') Low acidity cuts out all the high-end harshness, revealing chocolate and other undertones, and allowing you to make smoother, stronger coffee than any heated method. I can see having this around when I'm waiting 12 hours for my next pound of cold brew to be ready.
