greenopolis.com — Road kill is not a pretty thing, but there it is, on the shoulder of the highway. Sometimes a perfectly good animal meets up with a perfectly good automobile and they both suffer for it. Yes, I confess, I eat roadkill. If someone I know collides with a deer or I come upon one on the side of the road, I load them up, take them home and cut ‘em up.

My cousin hit & killed a deer with his 4x4, called the authorities and after they checked it out they said it was his to keep. Mmmm, venison!

Not much of a meat eater myself, but if I was I'd totally get down with some roadkill.

You must use your judgment. If the animal is warm and the air is cold, and if you dress it out and the flesh does not have any off odor, it's probably fine. I have found and used several deer that were still warm on a winter's morning. The carcass must be eviscerated (which drains most of the blood) and cooled quickly afterward. On a hot day, unless you hit the animal and take care of it right away, or if it is at all bloated or otherwise gross, forget it. Pull it off the road and bury it.
