I recommend using the free and open-source Perian plug-in, it enables you to play YouTube's .flv video and many other formats in Quicktime, as well as converting them to other formats.You do need a way to get the .flv file from inside the YouTube flash player, but several solutions exists. (The easiest free way is looking at the Activity window in Safari and option-clicking the .flv file.)
