That 'there is always more to know' is a grammatical truth about the notion of 'knowing,' not some sort of empirical observation. Your comment amounts to a truism, and a trite one at that. It is in no way a condemnation, or even an observation, of the actual practice of science. What you said amounts to "People think they're so smart but they're not!"
