I wouldn't mind betting that they just formatted the drives rather than physically overwriting the data.

Typically imaging software by default calculates a md5 hash as the image is being taken. It's possible that you could accidentally disable hashing, but unlikely - especially if you're required to do any documentation, which also is standard.

Usually they are called write blockers, because they block writing to the drives as they are imaged, preventing any corruption of the evidence.
