Odds are these are being made just as art pieces, not drinks for random customers. Besides, do you really want them to take half an hour to make you a cup of coffee anyway?
1) There isn't much cream, it's fairly thin2) It means it feels like silk in your mouth3) It has micro bubbles which carry the coffee taste better (it matters, OK?!)4) It doesn't take extra time, I can pour a rosetta in about 15 seconds...all it takes is the skill to steam the milk properly
Very cool, I also agree that doing some of those in a public place with a line would be way too time consuming. But if you get a really cute blonde I'll usually etch one of these bad boys in, I then proceed to get her phone number (mom or not) haha. Also those leafs and hearts take no time at all and take just as long as it would to pour the cup. I have a few videos I filmed of the Canadian Barista Champion 2006 pouring an amazing leaf (rosetta), a dragon, and a some other crazy stuff.
