Who cares? Just like you said, the users with Linux on their desktops won't know or heck even care about any differences. Just have to identify everything cleanly (Not just "Firefox" icon, rather a globe image entitled "Internet", or "Writer" instead of "OpenOffice.org Writer", etc.) just like you'd do with any other jobsite. (Ever been to a mechanic's shop? If something is missing a label, someone's getting their ass kicked)
Not to mention they are not using an European product instead of an American one. Do not underestimate the power of culture there. Esspecially France is known for choosing French, or otherwise, European products. I wish Holland (my country) would be more like that too. Would be wise.
