GSview can act as a front-end for Ghostscript, which can extract text from some PDFs. It really depends on how each particular PDF was created. Of course, you could just try to select and copy text while viewing in Acrobat Reader also.

This is a great service. I have a MBP at home but I often need to convert docs at work and I use a operating system which is somewhat lower down the food chain.

In Linux (I use Ubuntu, but I'm positive it works in other distros), I print a document to a file using Postscript, and then run ps2pdf to convert the .ps file to a .pdf one. i use nitro pdf professional. the trial is free but I got hooked and purchased a copy for $99. i've seen it on sale recently around the 80 dollar mark. well worth the money! its really feature rich when you compare it to the free tools out there. *FutureB, nitro pdf can do what you need. one of the reasons I bought this great little tool.*
