The point being, that on modern hardware the GUI takes up so little processing power and RAM that in most cases it's irrelevant, especially in setups where Mac servers are generally used.In fact, the time you save configuring the machine is most likely (or well, if there should be a point of it, hopefully) more than what you will lose in performance by running the UI.
