Differentiated cells like muscle fibers don't divide and multiply to "grow" rapidly in a dish without genetic changes.... changes that basically make them like cancer. That is more or less the definition of cancer, cells that have had mutations to their DNA that allow them to grow abnormally, uncontrolled.

The article says they need to start with cells from a live pig, I would assume this "seeding" has to be done periodically/frequently to continue this process in commercial production as "primary cells" can only divide a set number of times before they senesce due to telemere shortening. This telemere shortening can only be overcome through genetic manipulation.
