If you don't know what is happening and why, all you've really learned is how to solve a certain type of problem. I've known too many people who could just push the buttons on a calculator. Yet if you changed the problem (or even, in some cases, make it look a little different) they would whine that they didn't know how to do that. The purpose of classes should be to teach the concepts. Then you wouldn't (I'd hope) NEED to teach the calculator because they could understand what it's doing.
Does anyone remember that firmware you could flash your router with and it would display like 9,000 wireless networks making it impossible to find out witch one actually worked? I think that would be about the most effective way short of removing wireless capabilities.

There is a cool live-CD distro at remote-exploit.org that has a bunch of tools for pen testing. If you're worried about the security of your wireless net, I'd pop that in the CD-ROM, boot, then hack away...

If your hardware supports it, you can use packet injection with aireplay-ng to generate trafiic.
