bungie.net— "In Halo 2, if you shoot (our admittedly very sparse) decorators with a rocket, they just sit there, glibly ignoring the explosion. Our new decorators are actually destructible." FINALLY.

Does anyone else notice he's talking about the decorators being destructible, not the environment? Decorators at the little patches of grass that stick out of the ground, instead of just the flat grass texture. The decorators are destructible, NOT the level geometry. Seriously, let's not get something like this all blown out of proportion because of a misunderstanding. Basically grass and shrubbery can be destroyed, not the actual ground. At least from what they have told us so far, who know,s everything MAY be destructible, but don't hold your breath until you actually see/play the finished game yourself.
Just to echo what some others have said, anyone who judges Halo 3 right now from what they've seen (both screenshots and video) so far - you're an absolute idiot. Bungie has explicitly, CLEARLY stated that everything that's been released has been without most of the bells and whistles. The game is still in alpha and, thus, still probably looks nothing like it will when it hits the store shelves. I say that not as a fanboy (though I certainly am one) but as someone who actually likes to use his brain when making judgments of things. All done. Commence with the digging down. ;) Oh, and this is awesome news. I've been hoping for more destructible objects, shooting down trees and the like.

I can't wait for the Red VS Blue episodes on Halo 3, I'm sure they'll make the destructible environment funny somehow..
