Lots of converters out there in the marketplace, but most are not so user-intuitive and therefore requires lots of for-dummy guide. Take this one from United Digitals for example: http://www.uniteddigitals.com/faqs.html , it's a great guide on how to convert DVD to iPod using AVex DVD to iPod Video Converter Suite.
AVex DVD to iPod Video Converter Suite is ok, simple enough. But I prefer the PQ DVD to iPod Video Suite. Not so expensive as AVex products yet performance is as good as AVex's. The United Digitals' site: http://www.uniteddigitals.com , seems to have changed quite a bit, more friendly and more contents. Looks like they plan to add some more guides on these popular converters.

Handbrake light does it in 1 step, or possibly two, if you count browsing for the place you want to store the file a step. (Though it's for Mac, not Windows.)http://www.isquint.org/cgi-bin/ikonboard.cgi?act=ST;f=1;t=14
