Compiling, Video encoding come to mind just off hand. You can also set processor affinity if you have a bunch of single thread processes running.

Not so much of an issue with the current 2xWoodcrest setup, where there are functionally only two caches, not four.

Actally, Apple is using the mobile version (Merom) in the iMac. It was quietly announced like two weeks ago.
