Jedi Knight 1 & 2 were outrageously exceptional games, 3 was pretty damn fun. Though produced by Bioware, KOTOR I&II deserve mention.

I was going to say KOTOR is licensed by LucasArts so I think it counts. And all of the Dark Forces/Jedi Knight games and Xwing and Tie Fighter games.I'd like to see more of those. I still play Xwing Vs Tie Fighter at times!
