Always having paper around: easier said than done. Especially when you're running around at work and your idea isn't work-related. It's a little hard to tell a customer (I work in retail), "I'll help you in a moment. I need to find a piece of paper for my 'brilliant' idea."
Carrying an audio recorder is another great way to capture ideas if it's difficult to write. I know many ideas come to me while driving, not an activity very compatible with writing!
