Every blog has *some* sort of general structure -- that's the limitation of the medium. You have to work *within* those constraints many times for blogs -- you can't expect the designer to completely change your expectations of the medium.

As a web designer, you have to design to the lowest common denominator. There's "s**t loads of wasted space" because what fills up one person's screen doesn't fill up someone else's with a higher resolution setting. I'm guessing you have a higher setting than what is most common, giving you "s**t loads" of space. "Liquid" templates usually fix the issue by adjusting the content to fit the screen resolution but can do some things that aren't so aesthetically pleasing.
