I recommend creating an operations manual (or have your VA do it) so that these tasks can be passed along when you want to go from a VA to a regular employee. Hopefully a full staff!

I wonder why you'd go through Elance (or other agency) when you can just Google 'Virtual Assistant' and find one with the nous to create their own online presence. Why introduce a middle-man when one is not needed? Any VA that's been in business over five years is likely to be very good at what they do, otherwise they would have become a 'consultant', 'coach', or 'agency'.
VA's can do all these tasks and more. It is a good start for a business that is new to the virtual world. Good information for them. Just be sure that the individual or company you chose in the end is qualified for the work you need completed.
