What kind of camera/lens are they using? I am buying one. I know they have a tripod and a remote switch.

You can do this with any camera, even point and shoots. While many DSLR's can do auto exposure bracketing, most simple cameras have a manual mode that will let you adjust the exposure manually.Tripods are a must to keep the subject in the same place, but remote switches aren't necessary unless you're an amputee.
