Good simple overview. For those that want to minimize radiation exposure, be aware that smoking a pack a day is estimated to be about 10-40 mSv each year. That's the same as several CT scans each year.

Simplified:
A Geiger counter is pointed towards a radioactive source. The radioactive particles hit the detector and a beep is heard. There is baseline radioactivity everywhere so you will usually hear a beep every once and a while. If you start hearing the beep-beep-beep (multiple beeps per second) then you know that there is a lot of radiation in whatever you are pointing it at. So don't eat that object and go find one with less beeps!
