To clear this up:
Kinect automatically calibrates to the RANGE of motion it detects overall, to increase accuracy. It's simply responding to his *subtle* hand movements that he is subconsciously making as he watches the game play.

Glad this was noticed now. Microsoft had a great thing with kinect but they watered it down which could kill the tech completely if they're not lucky.
Remember VR? Thankfully Apple didn't go halves on the iPhone or else touchscreen tech would still be in the dark ages.

I wonder if you can turn off auto-steering, like one can turn off auto-aiming in first person shooters. I'll have to buy it and see.

It's pretty obvious that the game plays itself for the most part, with the users movements only 'refining' the path it takes, and maybe causing it to veer off and crash by interrupting the path it takes. Without this feature, the game would probably be beyond difficult to control, but you're technically not controlling it anyways.
